What it is
Crustaceans — shrimp, prawns, crab, lobster and crayfish — are one of the 14 EU-regulated allergens, and reactions to them are frequently severe and lifelong.
Where it hides
Beyond seafood dishes, crustaceans appear in fish stocks and bouillon, some curry pastes, and shrimp paste used in Southeast Asian sauces.
Safety note
EU law requires crustaceans to be declared on packaged food labels whenever they're used as an ingredient, even in small amounts.
