🌾Gluten
What it is
Gluten is the protein found in wheat, rye, barley, and related grains. It's one of the 14 EU-regulated allergens, and reactions range from coeliac disease (an autoimmune condition) to wheat allergy and non-coeliac gluten sensitivity.
Where it hides
Beyond bread and pasta, gluten hides in sauces, soups, beer, malt vinegar, some processed meats, and as a thickener in sauces and dressings.
Safety note
EU law requires cereals containing gluten to be declared on packaged food labels; products marketed as 'gluten-free' must contain no more than 20 mg/kg of gluten.
