🍷Sulphites
What it is
Sulphur dioxide and sulphites are preservatives (E220–E228) used to extend shelf life and prevent browning — one of the 14 EU-regulated allergens, though the reaction is usually a sensitivity rather than a classic immune allergy, and can trigger asthma-like symptoms in sensitive people.
Where it hides
Beyond wine and dried fruit, sulphites appear in processed potatoes, some fruit juices, vinegar, and processed meats.
Safety note
EU law requires a sulphites declaration whenever levels exceed 10 mg/kg or 10 mg/L in the finished product.
