Steps

  1. 1Cut pork shoulder into large chunks and place in a heavy pot or Dutch oven.
  2. 2Add lard, halved orange, quartered onion, garlic cloves, bay leaves, cumin seeds, salt, and enough water to almost cover the pork.
  3. 3Simmer slowly over low heat for several hours until the water evaporates and the pork begins to fry in its own fat and the added lard.
  4. 4Continue cooking, turning occasionally, until the pork is deeply golden brown and crispy on the edges.
  5. 5Remove pork from pot, shred it using two forks, and serve immediately.
