Steps
- 1Cut pork shoulder into large chunks and place in a heavy pot or Dutch oven.
- 2Add lard, halved orange, quartered onion, garlic cloves, bay leaves, cumin seeds, salt, and enough water to almost cover the pork.
- 3Simmer slowly over low heat for several hours until the water evaporates and the pork begins to fry in its own fat and the added lard.
- 4Continue cooking, turning occasionally, until the pork is deeply golden brown and crispy on the edges.
- 5Remove pork from pot, shred it using two forks, and serve immediately.
