Ingredients
- Dried chickpeas1 cup
- Onion0.5 medium
- Parsley0.5 cup fresh
- Cilantro0.25 cup fresh
- Garlic2 cloves
- Cumin1 teaspoon
- Baking soda0.5 teaspoon
- Flour2 tablespoons
- Vegetable oil3 cups for frying
- Pita bread4 pieces
- Tahini0.25 cup
- Lemon juice2 tablespoons
Steps
- 1Soak dried chickpeas overnight, then drain thoroughly.
- 2Combine soaked chickpeas, onion, parsley, cilantro, garlic, cumin, baking soda, and flour in a food processor, blending until finely chopped but not a paste.
- 3Form the mixture into small balls or patties.
- 4Heat vegetable oil in a deep pot to 350°F (175°C).
- 5Carefully fry falafel in batches for 3-5 minutes until golden brown and cooked through.
- 6Whisk tahini with lemon juice and a little water to create a sauce.
