  2. 2Combine soaked chickpeas, onion, parsley, cilantro, garlic, cumin, baking soda, and flour in a food processor, blending until finely chopped but not a paste.
  3. 3Form the mixture into small balls or patties.
  4. 4Heat vegetable oil in a deep pot to 350°F (175°C).
  5. 5Carefully fry falafel in batches for 3-5 minutes until golden brown and cooked through.
  6. 6Whisk tahini with lemon juice and a little water to create a sauce.
  7. 7Serve hot falafel with warm pita bread and tahini sauce.
