Ingredients
- Red lentils1 cup dry
- Onion1 medium
- Garlic3 cloves
- Fresh ginger1 inch piece

- Coconut milk1 can, 13.5oz
- Curry powder1 tablespoon
- Vegetable broth3 cups
- Vegetable oil1 tablespoon
- Cilantro0.25 cup
Steps
- 1Rinse red lentils thoroughly under cold water.
- 2Chop onion, mince garlic, and grate ginger.
- 3Heat vegetable oil in a pot, then sauté onion until translucent, adding garlic and ginger for the final minute.
- 4Stir in curry powder and cook for one minute until fragrant, then add rinsed lentils, vegetable broth, and diced tomatoes.
- 5Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until lentils are tender.
- 6Stir in coconut milk and heat through, then garnish with fresh cilantro before serving.
